The TRADITIONAL BALSAMIC VINEGAR OF MODENA starts out from cooked grape must, ripen by a long acetification process through natural fermentation and progressive concentration by aging for very long in a series of barrels made of different woods, without the addition of any flavorings.
Its colour is deep and shining dark brown and it reveals its density through a correct and smooth sirup-like consistency.
Its fragrance is characteristic and complex, sharp, apparently but pleasantly and armonically acid.
Its flavour is traditional and inimitable, proportionally sweet and sour; it offers generously full, rich and with velvety shadings in harmony with its distinctive fragrance.
