HISTORY OF THE FABBI'S VINEGAR LOFT
| Franco Fabbi's historic vinegar loft, with over 1300 invaluable barrels, is perfectly situated in a splendid 18th century country residence an architectural jewel at Collegara in the countryside near Modena. Franco moved the first set of barrels, dating to the late 19th century, inherited thm from his grandfather Giambattista who had lavished all his loving care and attention on them, to his country residence. The first set of barrels was expanded by Bruno, Franco's father, with new barrels all made from high quality wood. Since then the tradition has handed down to successive generations of the Fabbi family with the oral delivery of the secret rites and recipes that makes the know-how involved in making Traditional Balsamic Vinegar of Modena a cult event and a passion. All is roed in anthropological and cultural values long before family skills come into play. The vinegar loft flourished under the patient care and generous skills of Franco and his efforts were rewarded with a prize at the 1976 Spilamberto "Palio" - the recognised competition that each year assigns the "Palio" to the best tradětional balsamic vinegar. Today, Brunos historic vinegar loft can count on over 1300 barrels organised and cared for in compliance with all traditional canons.
